The cake batter is baked with green matcha tea and layered with a sweet, firm and creamy cheese cream that is acidly adjusted with a touch of lemon juice.
The layers are kept cut-resistant and well together by a red layer of strawberry jelly.
At the top is a crumbly dough sprinkled with matcha and freeze-dried strawberry pieces that give extra crunch and structure.
All in all, a fresh, tantalizing, sweet, sour and mouth-filling taste experience that is rounded off with green matcha in a creamy and gentle way.
Matcha is a shade-grown tea.
This means that the content of green chlorophyll and antibodies is preserved as much as possible in the top shoots of the plant.
Matcha tastes like green tea, but is not quite as bitter. Instead, it has lively notes of sprouting green seaweed.
